How We Roast

Great coffee starts long before it reaches your mug.

Moose & Mug Coffee Co. is based in Irvine, California, with our coffee roasted in Bend, Oregon. Each coffee is roasted in small batches using a carefully developed roast profile designed to bring out its natural flavor, aroma, body, and finish.

Roasting is a balance of temperature, timing, airflow, and careful development. Different coffees respond differently to heat, which is why each roast profile is approached with the characteristics of the coffee and the intended cup experience in mind.

From Green Coffee to Finished Roast

Coffee begins as a green seed with very little resemblance to the aromatic beans we know and love.

During roasting, heat transforms the green coffee through a series of stages that develop color, aroma, sweetness, acidity, body, and flavor.

The goal is not simply to make the beans darker. The goal is to carefully develop the coffee so that each roast reaches the flavor profile it was intended to deliver.

The Roasting Journey

1. Loading

Green coffee enters a preheated roaster. The beans begin absorbing heat and preparing for the changes ahead.

2. Drying

Moisture evaporates as the beans heat up. The beans move from green toward yellow as the foundation for flavor forms.

3. Browning

The beans begin to brown. Sweet, toasted, nutty, and caramelized flavor characteristics begin to emerge.

4. First Crack

As internal pressure builds, beans expand and produce an audible crack — marking the transition toward the final roast profile.

5. Development

After first crack, careful development determines the final balance of acidity, sweetness, body, aroma, and finish.

6. Cooling

The beans are rapidly cooled to stop the roasting process and lock in the intended characteristics of the coffee.

Small-Batch Roasting

Our coffees are roasted in small batches in Bend, Oregon.

Small-batch roasting allows each roast profile to receive close attention throughout the roasting cycle. Temperature, timing, airflow, and development can all influence the final cup.

The result is a more controlled approach designed to create consistency from batch to batch while highlighting the characteristics intended for each coffee.

Light, Medium & Dark Roast Profiles

Every roast level offers a different coffee experience.

Light Roasts

Light roasting generally preserves more of the coffee's natural brightness, acidity, and origin characteristics. These coffees may offer lively, delicate, fruity, floral, or crisp flavor notes.

Medium Roasts

Medium roasting creates a balance between origin character and roast development. These coffees often offer smooth sweetness, balanced acidity, rounded body, and approachable flavor.

Medium-Dark & Dark Roasts

Longer roast development creates deeper body and more pronounced roasted characteristics. These coffees may feature richer, bolder, chocolatey, caramelized, toasted, or smoky notes depending on the coffee and roast profile.

Every Coffee Has Its Own Profile

Coffee is not one-size-fits-all.

Different beans, origins, processing methods, and intended flavor profiles respond differently during roasting. That is why each Moose & Mug coffee is paired with a roast approach designed to complement the character of that particular coffee.

Whether you prefer a bright light roast, a smooth medium roast, a rich medium-dark coffee, or a bold dark roast, the goal is the same: create a satisfying cup with the flavor, aroma, and body the roast was designed to deliver.

Quality & Consistency

Roasting is only one part of producing great coffee.

Attention to roast development, batch consistency, aroma, flavor, and overall cup quality helps ensure that each coffee delivers the experience associated with its roast profile.

Because coffee is an agricultural product, natural variation can occur from crop to crop and lot to lot. Careful roasting helps maintain consistency while allowing the character of the coffee to remain part of the experience.
